2021米其林星級美食名單出爐!2021 MICHELIN Guide Was Announced!

最新的《台北台中米其林指南》於今年八月公告,新入榜名單餐廳中,台北有 1 間新二星、5 間新一星,台中則有2間新一星。若加上以實力維持住星星數的,2021年共有34間餐廳獲選米其林!快來看看有哪些垂涎欲滴的美食吧!

The latest MICHELIN Guide Taipei Taichung was announced in August this year. On the new restaurant list, Taipei has 1 new restaurant with two stars and 5 new with one star, and Taichung has 2 new with one star; if you add those restaurants maintaining their stars, there is a total of 34 restaurants selected by Michelin in 2021!


什麼是「米其林星」?What is a MICHELIN Star?

《米其林指南》評鑑制度分為三種:「米其林星」、「必比登推介」、「米其林餐盤推薦」,其中「米其林星」採用星星符號作為餐廳評價。

The rating system of “MICHELIN Guide” is divided into three types, “MICHELIN Stars”, “Bib Gourmand”, and “The Plate”; among them, “MICHELIN Stars” uses star symbol to rate restaurants.


一星:「優質烹調,不妨一試!」

二星:「烹調出色,值得繞道前往。」

三星:「卓越的烹調,值得專程造訪。」

According to the MICHELIN Guide:

One Star: High quality cooking, Worth a stop!

Two Stars: Excellent cooking, worth a detour!

Three Stars: Exceptional cuisine, worth a special journey!

嚴格嚴密的米其林評選機制

The Strict and Confidential Michelin Rating System


《米其林指南》的評選機制向來讓人津津樂道,擁有豐富旅遊經驗的評審員,大多畢業於頂尖餐旅學校,他們以匿名方式進入餐廳用餐,並依據5項評選標準給予評分,包含:食材品質、烹調技巧的駕馭能力、味道、料理展現的個性、餐飲水準的一致性,因此入選餐廳絕對在各方面都擁有傑出表現!

Most of the reviewers with extensive travel experience graduated from top hospitality and tourism schools; according to the Michelin Guide, they dine anonymously and rate the restaurants according to five criteria, including quality of the ingredients used, mastery of flavor and cooking techniques, personality of the chef in his cuisine, and consistency between visits.

新星降臨 閃閃發亮的新入選餐廳

The Sparkling Newly Selected Restaurants


台北新入選餐廳中,有從一星晉升為新二星的「侯布雄法式餐廳」,新一星則有

「De Nuit」、「富錦樹台菜香檳(松山)」、「米香 Mipon」、「牡丹 Tempura」、「T+T」等5間。

Among the newly selected restaurants in Taipei, “L'Atelier de Joël Robuchon Taipei” was upgraded from one star to two stars; and the new one-star restaurants are “De Nuit”, “Fujin Tree Taiwanese Cuisine & Champagne (Songshan)”, “Mipon”, “Mudan Tempura”, and “T+T”.


「De Nuit」為法文「夜晚」之意,店內裝潢色系沉穩優雅,融合法式料理與在地時令食材;「富錦樹台菜香檳」以在地台菜料理結合法式飲食節奏,期望創造台菜新體驗。

“De Nuit” means “by night” in French. The color tone of the interior design is calm and elegant, combining French cuisine with local seasonal ingredients; “Fujin Tree Taiwanese Cuisine & Champagne” combines local Taiwanese cuisine with the tempo of French food, expecting to create a whole new experience.


「米香 Mipon」以店名向台灣飲食文化致敬,主廚料理之路遍跡日本、地中海及泰國,但不忘融入家鄉味;「T+T」提供融合亞洲元素且小巧精緻的創意菜色,同時營造小酒館氛圍。

“Mipon” respects Taiwanese food culture with its name. The chef’s cooking experiences widely include Japan, Mediterranean, and Thailand, but he never forgets to incorporate the flavor of his hometown; “T+T” provides exquisite and creative dishes with Asian elements, and at the same time, creates an atmosphere of tavern.

台中也不惶多讓 星級美食來囉!

Restaurants in Taichung are also Unbeatable

台中新入選名單中,「俺達的肉屋」在搬遷至新址後,再次獲得一星肯定!它從肉品選擇、部位分切、烹調技法上秉持著專業而熱情的態度,並持續大膽嘗試。另一間沉靜低調的「澀」,則透過約11 道菜的套餐,展現四季變換與細膩滋味,看似簡單的料理背後都富含創作哲學,很難想像主廚林佾華才近三十歲!

In the newly selected list of Taichung, “Oretachi No Nikuya” was rated as one star again after moving to a new location. Sticking to a professional and enthusiastic attitude regarding no matter the meat selection, part cutting, and cooking techniques; the other restaurant “Sur-“ shows the four seasons and exquisiteness through a set of about 11 dishes. It is hard to believe that the chef is only nearly 30 years old!

2022米其林即將插旗台南與高雄

2022 MICHELIN Guide is Going to Extend to Tainan and Kaohsiung!

繼台北、台中之後,2022《米其林指南》將納入台南與高雄!身為文化古都的台南,自然有充滿在地精神的美食與味蕾,而港都高雄則融合多元族群,發展出獨特迷人且包山包海的創新料理。期待明年《米其林指南》將帶給我們更多驚喜!

MICHELIN Guide is going to extend to Tainan and Kaohsiung in 2022! As an ancient cultural city, Tainan naturally has the delicacies and tastes full of local spirit; the harbor city, Kaohsiung, integrates diverse ethnic groups to develop unique and innovative cuisines. Looking forward the “MICHELIN Guide” will bring us more surprises next year!
